Spicy Mutton Masala


Ingredients


1/2 Kg Mutton cut into medium cubes
1 tbs ginger paste
1 tbs garlic paste
1/2 turmeric powder
1 tsp salt
(combine all these ingredients in a pot with 1.5 litre of water and cook for about 45min or till mutton is softened)
If using a pressure cooker combine all ingredients into the cooker, add water just covering the meat and cook till you hear 6-7 Wiesel. Turn off the fire and let it stand for about 10 min.  Remove from cooker and drain the water and leave it aside.


For the Gravy 
2 large shallots sliced 
2 tbs chili paste
2 tbs chili powder
2 tbs cumin powder
2 tbs fennel powder
3 tbs corriender powder
1 nos cinnamon stick
2 nos star anise
4 nos cloves
4 nos cardamon bruised
1 tbs vinegar
2 sprigs curry leaf
2 ripe tomato sliced
3 potatoes (boiled and cut lenght wise)
5 stalks cilantro chopped
1/2 cup oil


Method of Cooking


1.  Heat oil in a Kadai/wok.
2. When oil is hot put in the cinnamon stick, star anise, cloves curry leaves and cardamon. Saute until the spices start to pop.
3. Now add in the shallots, garlic and ginger paste saute till fragrant (low fire)
4. Its time to add all the powdered spices, mutton, salt and 1 cup of water.  Stir well and cook for about 15- 20 min or until all the masala/gravy have nicely absorbed into the mutton.
5. Finally stir in the boiled potatoes, tomatoes, vinegar (optional) and the chopped cilantro. Mix all the ingredients well and cook for about 5 more min or till the tomatoes are softened.
6. Remove from stove, garnish with fresh cilantro and serve.
