Pajeri Nenas (Pineapple Curry)

Pineapple Pajeri is my all time favourite dish.  Even now when i am visiting my mum i ask her to cook this dish for me. This is one of our family signature dish. Pineapple Pajeri goes well with Ayam Masak Merah (Chicken in Red Sauce) and Acar Rampai (Mix Veg Pickle).

Pajeri Nenas
 Ingredients
1 medium Pineapple cut into bite sizes
4 tbs Chicken curry Powder
2 nos Lemongrass
1 nos Galanggal (Lengkuas) 3in bruised
1 nos turmeric leaf
1 nos Red chili
1 onion sliced
1 tbs garlic paste
1 tbs ginger paste
1 nos cinnamon stick
2 nos star anise
3 nos cardamon
3 tbs sugar
5 tbs oil
2 tbs full kerisek ( can get frm any supermarket or Buy grated coconut, dry fry until brown and blender in a dry blender until the oil come out)
1/2 cup coconut milk (light)
2 cups water

Method of cooking

1. Heat wok and pour in the oil.
2. Once hot throw in the spices cinnamon, cardamon, star anise and cloves. saute for about 2-3mins.
3. Now add the aromatics lemongrass, galanggal, turmeric leaf  and cook until the fragrant comes out.
4. Add the onion, garlic and ginger paste and stir well then combine the chicken curry powder, kerisik, water and  leave it to cook for 10mins.
5. Stir in Pineapple, coconut milk, sugar, red chili and let the curry boil till it slightly thicken.
6. Remove from stove.  Serve with rice.
