Fresh and Lite Rice Noodles Soup



Prepared this Noodle last Thursday, it was raining very heavily so thought it will be a great dish to enjoy and to keep us warm.  This dish is very easy to prepare and healthy for those on diet.  The Bowls used in the picture are from Vietnam. I bought it during my visit there last year. Its a beautiful place and they are well known for their noodles very fresh and delicious . Got my Inspiration for this noodle from Vietnam.

Fresh and Lite Rice Noodles Soup

Serves 4
Ingredients
400gm Noodles soaked in hot water (5min or till tender to your liking and drained
For Stock
2 onion cut into four
1 carrot cut into big chunks
2 pc chicken with bone
2" Ginger lightly crushed
2 cloves garlic crushed
2 stalks spring onion
1 tsp Black Pepper (adjust according to your taste)
1 tsp white pepper (adjust according to your taste)
(Boil all these for about an hour and drain, Remove the chicken and shred into thin slices and use as garnish.

Blanch
2 cups of Beans Sprouts (Taugeh)
2 Cups of Tomiu leaves (you can use other veg that does not need cooking)
1 Cup Grated Carrot

2 tofu cut into cubes and deep fry
1 stalk Spring onion cut thin for garnishing

Method to prepare

1.  In a Bowl put in the Cooked noodle garnish with all the blanched veggies, Fried Tofu, chicken and pour in the soup.
2. Serve Hot
