Spicy Brinjal Sambal


Spicy Malay Brinjal Sambal

Ingredients

2 Long Brinjals (Cut lenghtwise  3in long and fry till golden brown with little oil)
1 large onion pounded
1 Large onion sliced
5 cloves garlic pounded
2 tbs tamarind juice
1tbs sugar
4 tbs chili paste (dry chili boiled and blended with 1 tbs of  soaked
dried shrimp,water into thick paste) Dry shrimp is optional.
2 tbs oil
2 Sprigs of Spring Onion
Salt to taste

Method of Cooking
1. Heat oil in a wok
2. Saute the pounded onion,garlic till fragrant.
3. Add Chilipaste cook till the oil separate from paste.
4. Now pour in tamarind juice and the fried brinjal, sliced onion and salt.
5. Stir well until the brinjal thoroughly coated, remove from stove.
6. Garnish with Spring onion.
6. Serve with Rice or any type of breads.
