Simple Sunday Lunch (Serves 4)
These two dishes compliments each other very well. Its makes a perfect lunch for sunday. For the recipe see below:
Rasam
1 tea spoon grounded fennel seed
2 tea spoons grounded cumin seed
2 tea spoons grounded coriander seed
1/2 tea spoon turmeric powder
4 tablespoons Tamarind Juice
salt to taste
(Mix all these dry ingredients in four cups of water and bring to boil and remove from stove)
4 small onions sliced thin
1 teaspoon of pounded garlic
2 sliced dry chilies
2 big tomatoes sliced
2 sprig of curry leaves
1 teaspoon astofeda
Pour 2/3 tablespoons of oil (preferable gingerly oil)
saute all the ingredients until golden brown, ensure the tomates have soften and pour into the pot of boiled herbs.
The rasam is ready
Sardine Paratal
1 Large can Sardine with sauce
5 small onions thinly sliced
1 large onion thinly sliced
1 tablespoon pounded garlic
2 tablespoons of julienne young ginger
1 green chili julienne
2 tomatoes
2 sprigs curry leave
1 tea spoon mustard seeds
1 tablespoon Chili powder (can use more if you liked it spicy but not more than 2)
3 tablespoons thick Tamarind juice
Method of Cooking
Heat a wok. Pour in 4 tablespoons of cooking oil/Gingerly Oil.
Once its hot add the onions, saute until its fragrant and then add in garlic, curry leaves, ginger, mustards seeds and green chili. Toss it for one minute then add sardine gravy (only) from the tin followed by the tomatoes, chili powder, tamarind juice and let it come to a boil. Finally add the sardine flesh break it and stir in until nicely coated with all the gravy. Serve Hot with Rice and rasam.
